Sika deer unbleached cake flour(9-10% protein). It can be used as is to make tender cakes and pastry. Cake flours are by defination heavily bleached to change the nature of the wheat starch, allowing it to absorb more liquid, support the large amounts of sugar and fat that are usually part of cake formulations. Cakes made with unbleached flour have more body, High-quality TMF Sika Deer Flour is never bleached, as untreated gluten is more tender and, handled gently, will produce a more tender baked goods.
